Prep Time
- Prep Time: 10 minutes
- Cook Time: 10–12 minutes
- Total Time: 20 minutes
- Serves: 2–3 people
Ingredients
- 1 ripe banana, peeled and mashed
- 1 banana, thinly sliced
- 1 cup self-raising flour
- 2 teaspoon sugar or honey
- Water (about ¾–1 cup, enough for pancake batter consistency)
- Blueberries
- Vanilla ice cream
- Nutella for garnish
Step-by-Step Method
Step 1: Prepare the Bananas
Peel and mash one ripe banana in a bowl until smooth. Thinly slice the second banana and set aside for layering inside the pancakes.
Step 2: Make the Batter
Add the self-raising flour and sugar to the mashed bananas. Slowly pour in water while whisking until you get a smooth, lump-free pancake batter. The batter should be thick but pourable.
Step 3: Heat the Pan
Place a non-stick pan on medium heat. Lightly grease the pan if needed.
Step 4: Cook the Pancakes
Pour small amounts of batter into the pan to form mini pancakes. Cook for 2–3 minutes until bubbles appear on the surface.

Step 5: Flip & Finish
Flip the pancakes carefully and cook the other side until golden brown and fluffy.
Step 6: Serve & Layer

Stack the warm pancakes on a plate and layer thin banana slices and between each pancake for extra sweetness and softness. Top with fresh blueberries, a scoop of vanilla ice cream, and drizzle Nutella over the top for a delicious dessert-style finish.
