Easy Loaded Veggie Nachos with Cheese and Salsa

When you need something fast, fun, and packed with flavour, these Loaded Veggie Nachos are always a winner. They come together in minutes and can be customised with your favourite toppings. Ingredients

  • 1 large bag tortilla chips
  • 1 cup corn kernels
  • 1 red capsicum, diced
  • 1 green capsicum, diced
  • ½ red onion, finely diced
  • ½ cup sliced black olives
  • 1½–2 cups grated cheese
  • ½ cup salsa
  • 1 jalapeño, sliced (optional)
  • Fresh coriander for garnish
  • Sour cream or Greek yogurt for serving (optional)

Method

Step 1: Prepare the Base

Preheat the oven to 180°C.

Spread the tortilla chips evenly on a large oven-safe tray or baking dish.

Step 2: Add the Toppings

Scatter the corn, capsicum, onion, and olives over the chips.

Spoon small amounts of salsa across the tray.

Sprinkle generously with grated cheese.

Step 3: Bake

Bake for 10–12 minutes or until the cheese has melted and turned golden.

Step 4: Garnish and Serve

Remove from the oven and top with fresh coriander, extra salsa, sour cream, or sliced jalapeños.

Serve immediately while the chips are still crispy.
