Ingredients
- ½ green capsicum, cut into medium cubes
- ½ red capsicum, cut into medium cubes
- ½ yellow capsicum, cut into medium cubes
- 2 medium onions, diced into square pieces
- 350g paneer, cut into cubes
- 1 tablespoon oil
- 2 teaspoons salt (adjust to taste)
- 2 teaspoons coriander powder
- 1 teaspoon chilli powder
- 1 teaspoon turmeric powder
- 1 tablespoon tomato sauce
Method
Step 1: Prepare the Vegetables
Wash and cut the capsicums into medium-sized cubes. Dice the onions into square pieces and cut the paneer into neat cubes.
Step 2: Sauté the Vegetables
Heat the oil in a large frying pan or wok over high heat. Add the onions and capsicums and stir-fry for about 2 minutes. The vegetables should remain slightly crisp.
Step 3: Add the Spices
Add the salt, coriander powder, chilli powder, and turmeric. Stir well and cook for 1 minute, allowing the spices to coat the vegetables and release their aroma.
Step 4: Add Sauce and Paneer
Add the tomato sauce and paneer cubes. Gently mix everything together so the paneer is coated with the spices and sauce.
Step 5: Cover and Cook
Cover the pan with a lid and cook for 1 minute. This allows the flavours to blend while keeping the vegetables crisp and fresh.
Step 6: Serve
