A delicious savoury vermicelli recipe made with colourful vegetables, aromatic spices and crunchy roasted peanuts and cashews—perfect for breakfast, lunch or a light dinner.

Ingredients

  • 2 Cup vermicelli
  • 2 tbsp olive oil
  • 1 medium red onion, finely chopped
  • ½ tomato, chopped
  • 1 cup mixed vegetables
  • ¼ cup peanuts
  • ¼ cup cashews
  • ¼ tsp turmeric
  • 1 tsp red chilli powder (adjust to taste)
  • 1 tsp ground coriander
  • 1 tsp salt (or to taste)
  • hot water

Method

Step 1

Dry roast the vermicelli in a large pan over medium heat, stirring continuously until it turns light golden brown and becomes fragrant. Remove from the pan and set aside.

Step 2

If your peanuts and cashews are not already roasted, dry roast them in the same pan until lightly golden and crisp. Set aside.

Step 3

Meanwhile, bring a pot of water to a boil. Add 1 teaspoon olive oil and the roasted vermicelli. Cook for 3–5 minutes, or until the vermicelli is just tender. Drain well and set aside.

Step 4

In a separate frying pan, heat 1 teaspoon olive oil over medium heat. Add the chopped onion and cook until lightly golden.

Step 5

Add the chopped tomato and cook for about 1 minute, until it begins to soften. Stir in the mixed vegetables (peas, carrots and corn) and cook for 2–3 minutes until they are slightly tender.

Step 6

Add the turmeric, ground coriander, red chilli powder and salt. Mix well and cook for another 1 minute until the spices become fragrant.

Step 7

Add the cooked vermicelli and gently toss everything together until well coated with the masala. Cook over low heat for 2 minutes, stirring occasionally.

Step 8

Fold in the roasted peanuts and cashews. Cook for another 1 minute, then remove from the heat.

Step 9

Serve hot as a wholesome breakfast or light lunch meal. Enjoy on its own or with a cup of masala chai.


Serving Suggestions

  • Serve with plain yogurt or raita.
  • Add a squeeze of fresh lemon juice before serving.
  • Garnish with fresh coriander for extra flavour.
