Method
- Step 1: Bake the Beetroot
- Wash and peel the beetroot. Slice it into thick pieces and bake at 200°C (390°F) for 10 minutes, or until soft and tender. Allow it to cool slightly.
- Step 2: Roast the Garlic
- Wrap the garlic cloves in foil or place them alongside the beetroot while baking. Roast until soft and lightly golden.
- Step 3: Prepare the Chickpeas
- If using canned chickpeas, drain and rinse well. If using home-cooked chickpeas, ensure they are soft and tender.
- Step 4: Blend Everything
- Add the following to a food processor or blender:
- Chickpeas
- Baked beetroot
- Roasted garlic
- Lemon juice
- Olive oil
- Salt
- Blend until smooth.
- Step 5: Adjust the Consistency
- Gradually add water, one tablespoon at a time, blending after each addition until you achieve a smooth, creamy hummus.
- Step 6: Taste and Adjust
- Taste and add extra lemon juice or salt if needed. Blend once more.
- Step 7: Garnish & Serve
- Transfer to a serving bowl. Top with roasted peanuts and sesame seeds. Serve with crackers, toasted pita, fresh vegetables, or spread on sandwiches and wraps.

Tips for the Best Beetroot Hummus
- Roast the beetroot instead of boiling for a sweeter, richer flavour.
- Roasted garlic gives a milder, creamier taste than raw garlic. or can skip garlic
- Add water gradually to control the texture.
- Chill for 30 minutes before serving for even better flavour.
