Healthy Beetroot Hummus: Quick & Delicious Dip

Ingredients
  

  • 2 cups boiled chickpeas or 1 tin, drained and rinsed
  • 3 –4 slices baked beetroot
  • 3 garlic cloves roasted
  • 2 tablespoons lemon juice
  • 1 teaspoon olive oil
  • Water as needed for desired consistency
  • Salt to taste about ½ teaspoon
  • For Garnish
  • Roasted peanuts
  • Sesame seeds

Method
 

  1. Step 1: Bake the Beetroot
  2. Wash and peel the beetroot. Slice it into thick pieces and bake at 200°C (390°F) for 10 minutes, or until soft and tender. Allow it to cool slightly.
  3. Step 2: Roast the Garlic
  4. Wrap the garlic cloves in foil or place them alongside the beetroot while baking. Roast until soft and lightly golden.
  5. Step 3: Prepare the Chickpeas
  6. If using canned chickpeas, drain and rinse well. If using home-cooked chickpeas, ensure they are soft and tender.
  7. Step 4: Blend Everything
  8. Add the following to a food processor or blender:
  9. Chickpeas
  10. Baked beetroot
  11. Roasted garlic
  12. Lemon juice
  13. Olive oil
  14. Salt
  15. Blend until smooth.
  16. Step 5: Adjust the Consistency
  17. Gradually add water, one tablespoon at a time, blending after each addition until you achieve a smooth, creamy hummus.
  18. Step 6: Taste and Adjust
  19. Taste and add extra lemon juice or salt if needed. Blend once more.
  20. Step 7: Garnish & Serve
  21. Transfer to a serving bowl. Top with roasted peanuts and sesame seeds. Serve with crackers, toasted pita, fresh vegetables, or spread on sandwiches and wraps.

Notes

Tips for the Best Beetroot Hummus
  • Roast the beetroot instead of boiling for a sweeter, richer flavour.
  • Roasted garlic gives a milder, creamier taste than raw garlic. or can skip garlic
  • Add water gradually to control the texture.
  • Chill for 30 minutes before serving for even better flavour.
Storage
Store in an airtight container in the refrigerator for up to 4 days. Stir before serving if it thickens.
