This simple tomato garlic chutney is fresh, flavourful and easy to make. It pairs beautifully with paratha, chilla, dosa, sandwiches or even as a dip.
Ingredients
Method
- Heat the pan
- Add 1 teaspoon oil to a pan and heat gently.
- Add tomatoes and garlic
- Place the tomato halves and garlic cloves in the pan.
- Cover and cook
- Cover with a lid and cook for a few minutes on medium heat until the tomatoes become soft and tender.
- Remove the tomato skins
- Once cooked, remove from the heat. When cool enough to handle, gently peel off the tomato skins.
- Let everything cool
- Allow the cooked tomatoes and garlic to cool slightly before blending.
- Blend the chutney
- Add the tomatoes and garlic to a blender with 1 teaspoon salt and a pinch of chilli powder. Blend until smooth or slightly chunky, depending on your preference.
- Add onion and coriander
- Transfer the chutney to a bowl. Add finely chopped onion and fresh coriander and mix well.
Notes
- Adjust the chilli powder according to your taste.
- For extra heat, add a green chilli while cooking the tomatoes.
- Let the tomatoes cool slightly before blending.
- Blend until smooth or leave slightly chunky, depending on your preference.
- Store leftover chutney in an airtight container in the refrigerator.
