Ingredients
For Cooking the Dal
- 2 cups red lentils, also known as masoor dal
- 5 cups water
- 1 tablespoon salt, or adjust to taste
- 1 teaspoon turmeric powder
For the Tadka
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 medium onion, finely chopped
- 1 medium tomato, finely chopped
- 4–5 thin slices of fresh ginger
- 2 green chillies, sliced or chopped
- 1 tablespoon coriander and cumin powder
- ½ teaspoon red chilli powder, or adjust to taste
For Garnishing
- Fresh coriander leaves, finely chopped
Step-by-Step Instructions
Step 1: Wash the Lentils
Place the red lentils in a large bowl and rinse them thoroughly with water.
Wash the lentils two to three times, or until the water becomes mostly clear. Drain the excess water.
Red lentils do not usually require soaking because they cook very quickly.
Step 2: Cook the Dal

Add the washed lentils to a large saucepan or cooking pot.
Pour in 5 cups of water. Add the salt and turmeric powder, then stir everything together.
Place the pot over medium-high heat and bring the dal to a gentle boil.
Step 3: Simmer Until Soft
Reduce the heat to low or medium-low.
Partially cover the pot and allow the dal to simmer for approximately 15 minutes.
Stir occasionally to prevent the lentils from sticking to the bottom of the pan.
Cook until the lentils become completely soft and creamy. Add a little extra hot water if the dal becomes too thick.

Step 4: Heat the Oil

Heat 1 tablespoon of oil in a small frying pan over medium heat.
Add the cumin seeds and allow them to sizzle for a few seconds. Be careful not to burn them.
Step 5: Cook the Onion, Ginger and Green Chillies
Add the chopped onion, sliced ginger and green chillies to the pan.
Cook for approximately 4–5 minutes, stirring regularly, until the onion becomes soft and light golden.
Step 6: Add the Tomato
Add the chopped tomato and mix well.
Cook for another 3–4 minutes, or until the tomato becomes soft and begins to blend into the onion mixture.
Step 7: Add the Spices
Reduce the heat to low.
Add the coriander and cumin powder along with the red chilli powder.
Mix everything well and cook for about 30 seconds to 1 minute. Add a small splash of water if the spices begin to stick to the pan.
Avoid cooking the dry spices for too long, as they may burn and taste bitter.
Step 8: Add the Tadka to the Dal
Carefully pour the prepared tadka over the cooked red lentil dal.
Mix everything together and simmer the dal for another 2–3 minutes so that all the flavours combine beautifully.
Step 9: Garnish and Serve

Turn off the heat and garnish the dal with freshly chopped coriander leaves.
Serve warm with steamed rice, jeera rice, roti or chapati.
