A quick homemade curry made with fresh spinach, soft paneer, and everyday spices.

Ingredients
- Fresh spinach around 500gm (palak)
- Paneer cubes (400gm)
- 1 small onion, finely chopped
- 1 tsp ginger, chopped
- 1 tsp garlic, chopped
- 1–2 green chillies (crushed)
- 2 dried red chillies
- 2 tbsp tomato puree
- Salt to taste
- 1/2 tsp chilli powder
- 3 tsp coriander powder
- 1/4 tsp turmeric
- Oil
Step-by-Step Method
Step 1:
Bring water to a boil and cook the spinach for about 5 minutes until wilted and vibrant green. Immediately transfer the spinach into cold water to stop the cooking process and help retain its bright colour.
Step 2:
Drain the spinach and blend it into a smooth, creamy paste. Set aside.
Step 3:
Heat oil in a pan over medium heat. Add dried red chillies and sauté for a few seconds until aromatic.
Step 4:
Add chopped onion, ginger, garlic, and crushed green chilli. Sauté until the onions turn soft, lightly golden, and fragrant.
Step 5:
Add salt, chilli powder, coriander powder, and turmeric. Stir well and cook the spices for about 1 minute to release their flavour.
Step 6:
Add tomato puree and mix well. Cook for 2–3 minutes until the oil starts to separate slightly from the masala.
Step 7:
Pour in the spinach paste and stir gently. Let it simmer for about 5 minutes so the flavours combine beautifully.
Step 8:
Add paneer cubes and cook for another 2 minutes until the paneer is soft and heated through.
Step 9:
Garnish with fresh coriander leaves, onion slice and serve hot with roti, naan, or rice
