Ingredients
- ½ cup paneer (cottage cheese)
- few coriander leaves and Spinach (chopped)
- 1 green chilli
- ½ onion (finely chopped)
- Salt to taste
- ½ tsp coriander powder
- 4 slices high-protein bread
- Butter (as needed for toasting)

Step-by-Step Method
Step 1: Make the Paneer Filling
Add paneer, coriander leaves, green chilli, salt, and coriander powder into a blender. Pulse lightly to create a coarse, textured mixture (not a smooth paste).
Step 2: Add Fresh Crunch
Transfer to a bowl and mix in finely chopped onion. This adds freshness, crunch, and balance to the filling.

Step 3: Prepare the Bread
Take high-protein bread slices and lightly spread butter on one side of each slice for a crispy golden finish.
Step 4: Assemble the Sandwich
Spread the paneer mixture evenly on two slices. Cover with the remaining slices to form sandwiches.
Step 5: Toast Until Golden
Toast in a pan or sandwich maker until both sides are golden brown, crisp, and slightly crunchy on the outside.
